This great Pinot Noir is showing lovely evolution.  Maraschino cherry and Campari draw you in on the nose.  Notes of speck with sweet salty dried plum that drive a savory palate are well balanced with mulberry.  Tannins are soft and velvety, and the oak is generous and framing.

Production notes and Chemistry 

This premium Pinot Noir is a mix of 6 old vine Pinot Noir clones that are dry grown in the red soil at the top of Red Hill.  It is the coolest part of the Mornington Peninsula.  The grapes were hand harvested and destemmed before given a 5 day cold soak when natural fermentation took over.  This beautiful Pinot Noir was aged in french oak, 20% of which was new.  It was aged for 16 months before bottling in November 2020.

Food Pairing

This gold standard Mornington Peninsula Pinot Noir would pair well with seared eye fillet strips, bacon lardons and shaved red cabbage slaw.
