Production Notes and Chemistry
The fruit used in this great Chardonnay, came exclusively from Eldridge Estate which is one of the highest vineyards on the Mornington Peninsula. Indigenous yeast created a wonderful Chardonnay which was fermented and aged in French oak.
This quality Chardonnay pairs well with roasted, crispy skin, free range chicken served with preserved lemon and roasted garlic.
Halliday reviewed this top Chardonnay as follows: “There’s a richness imparted, via both winemaking and ripeness of fruit, that makes this immediately appealing. Peach and quince drizzled with lemon juice, a touch of powdered ginger and lemon curd. Savouriness comes out alongside nutty leesy flavours, which also adds lots of texture. A very good chardonnay.”
