An elegant wine that shows florals, undergrowth that positively glows with red cherry and a little rose petal delicacy. The silky tannins let the fruit flavours roll around the mouth and provide great length.
The 2017 vintage was a little cooler than normal with lower crop levels. This wine is a blend of the finest fruit from the property. It is a mix of 7 clones although the highest proportion is the Pommard clone.
Production notes and Chemistry
This wine fermented from wild yeasts, which means that the alcoholic fermentation started naturally after picking in March 2017. A wild fermentation process gives a more interesting texture and more complex flavors to the wine. After a second fermentation, called Malolactic fermentation, where the Malic acid is transformed into Lactic acid. 13.7% Alcohol by Volume, pH 3.50 and Total Acid of 5.9g/L
