Tasting notes
The 2017 vintage was a little cooler than normal with lower crop levels. Deep red-purple with aromas of cherry & spice. The palate has dark berry fruits, a touch of raspberry & a
whisper of oak. Fine supple, savoury tannins & great length. A wine of power, charm & grace.
Vineyard facts
This wine is made from a single patch of MV6 – rows 33 – 35. The bunches are destemmed but the resulting skin and juice mix contains 95% whole berries.
Production notes and Chemistry
A 5 day pre-fermentation cold soak preceded a natural ferment with no yeast being added. The wines were pressed in our gentle air bag press (see winemakers diary under the Cellar
Door web page) and then aged in French oak barrels from a range of tonnelleries. 13.4% Alcohol by Volume, pH 3.52 and Total Acid of 5.8g/L
Food Pairing
Roast Pork with roasted carrots, onions and potatoes.
